A chef de partie is a specialized cook who works under the direction of the chef de cuisine and the sous chef de cuisine. The Chef de Partie is responsible for a specific cooking station, such as pastry, grilling or sauce, and oversees the preparation and cooking of food. The chef must be able to manage his position independently while respecting the standards of quality and presentation of dishes established by the chef de cuisine.
Key responsibilities:
- Prepare and cook food according to the recipes and instructions of the chef de cuisine and the sous chef de cuisine
- Supervise kitchen assistants and apprentices in preparing and cooking food
- Help create menus by suggesting dishes that can be prepared from your specific station
- Ensure the quality and presentation of dishes according to the standards established by the chef
- Manage food stocks and product orders necessary for your specific position
- Ensure compliance with hygiene and food safety standards in your specific position
Skills required:
- Excellent cooking skills and in-depth knowledge of food preparation and cooking techniques related to his specific position
- Ability to work independently while respecting the standards of quality and presentation of dishes established by the chef
- Ability to effectively manage a small team of kitchen assistants and apprentices
- Knowledge of food safety standards and government food hygiene regulations
- Ability to work under pressure and manage peak periods successfully
Education and experience required:
- Diploma in cooking or equivalent experience in the culinary field
- Experience working in a commercial kitchen
- Experience working in a specialized position related to cooking, such as baking, grilling, or sauce making.
Remuneration:
The hourly rate of a Party Manager varies according to the geographic region and experience. On average, the rate used by Onestaff's partner establishments is €18.00 excluding tax/hour.
